Morrocan Chicken Drumstick

Ingredients

  • 5 chicken drumsticks
  • 1 onion - chopped
  • 1 cup of water
  • 1 tablespoon of cooking oil
  • 1 teaspoon of crushed garlic
  • 1 teaspoon of salt
  • 1 teaspoon of ginger powder
  • 1/4 teaspoon of turmeric powder
  • 1 egg
  • Bread crumbs
  • Oil for frying

Directions

  1. Add the cooking oil, onion, chicken, garlic, and spices in your cooking pan. Cover the cooking pan and let all the ingredients cook for 5 minutes on medium heat.

  2. After 5 minutes, add 1 cup of water to the chicken. Cover your pan and let the drumsticks cook for 30 minutes. Stir from time to time.

  3. Once the chicken is cooked, remove it from the sauce. Keep the sauce as we are going to present it with the chicken at the end.

  4. Heat the frying oil in a flat pan.

  5. Beat the egg. Dip the chicken drumsticks in the egg, then coat them with bread crumbs.

  6. Fry the chicken drumsticks on every side until golden brown. Use paper towel to remove excess oil when done.

  7. Serving:
    Serve the chicken drumsticks immediatly with the onion sauce in the side. Enjoy!

Basic Pizza Dough

Ingredients:

400ml lukewarm water
14g fresh yeast or 1 x 7g sachet of dried yeast
15g caster sugar
700g “00” flour, plus extra for dusting
30g gluten flour, optional
30g table salt
60ml extra virgin olive oil
50ml milk


Step 1: Add 2 tablespoons of the water to the yeast and massage it into a paste with your fingers. Add the remaining water and the sugar and stir to combine.


Step 2: Tip flour, gluten if using, and salt into the bowl of an electric mixer with the dough hook attached. Turn mixer onto low speed and add yeast mixture. Let it mix for 2 minutes until the dough comes together. Add oil and milk and mix for another 4 minutes until smooth and elastic.


Step 3: Lightly dust a clean work surface with flour. Remove dough from the mixer, scraping the dough hooks. Knead the dough for a couple of minutes, dusting with more flour when necessary. Shape the dough into a ball.


Step 4: Lightly dust a clean chopping board or baking sheet with flour. Place the dough on the board and cover with a clean tea towel and leave in a warm, draught-free place to prove for 10-15 minutes.


Step 5: Cut the dough into 120g portions and roll into balls. Cover with the tea towel and set aside on the floured board to rise for a further 30 minutes or doubled in size.

Thai Sauce


1) Goreng bawang putih yang dirincik halus. Add in sliced red chillies. Add in generous amount of sugar and tamarind juice. Gaul. Garnish with coriander leaves.

Seafood Pie


White Sauce
Butter, milk, flour - let to simmer

Cara-cara:
1) Atur seafood atas dulang.
2) Tuang white sauce.
3) Topped with (mashed potato +crabmeat)
4) Tabur butter.
5) Bakar.

Mustard Dressing


Mix: mustard, honey, lemon juice, olive oil and salt together.

Takoyaki


  • BAHAN TEPUNG :
  • 1 cawan tepung gandum
  • 300ml air
  • 1 sudu baking powder
  • 1 biji telur
  • sedikit garam
  • Daun bawang & kobis diracik halus
  • BAHAN INTI :
  • Tako (nak senang, boleh beli siap kat Sushi Section Jusco)
  • **selain tako (sotong), boleh guna tuna dlm tin / dried scalop / ketam / udang dll. tapi dah tak jadi TAKOyaki lagi la..**
  • BAHAN HIASAN :
  • Seaweed (kepingan rumpai laut) - racik halus
  • Fish Flakes (boleh dapat kat bhgn makanan jepun di Jusco)
  • Mayonis
  • Sos Takoyaki (sos cili pun boleh)

Cara-cara

  1. Campur semua bahan untuk tepung. Pastikan ianya tidak terlalu cair dan tidak terlalu pekat. Agak2 cair sikit aje dari adunan jemput-jemput.
  2. Panaskan acuan takoyaki dengan sedikit minyak. Tak ada acuan takoyaki, guna acuan kuih cara.
  3. Tuangkan adunan 3/4 penuh dalam dalam setiap acuan. Kemudian masukkan tako dan tunggu kejap sampai bhgn bawahnya masak.
  4. Gunakan lidi untuk terbalikkan takoyaki supaya masak pada kedua2 bahagian atas dan bawah.
  5. Keluarkan takoyaki yg siap dimasak. Taburkan seaweed , fishflakes, sos & mayonis. Sedia utk dihidang. Sedap dimakan panas-panas.
