Yogurt Fried Chicken


Ingredients :~
(A)

  • 1 whole chicken ~ cleaned and cut into medium sizes, drained.
  • 1 cup/250ml plain yogurt
  • 6 garlic cloves ~ finely pounded
  • 2 inches ginger ~ finely pounded
  • 1 tbsp paprika powder
  • 1 tbsp cayenne powder
  • salt to taste
  • 2 sprigs of curry leaves

(B)

  • 1.5 cups wheat flour ( u may also add some rice flour)
  • 1 tsp baking powder
  • 1 tbsp cayenne powder
  • 1 tbsp paprika powder
  • a pinch of salt
  • lemon juice (optional)
  • cooking oil
  1. In a large bowl, marinate chicken together with all ingredients (A). Leave it aside for about 2-3 hours ( may also marinate overnight).
  2. Once marinating time is over, mix together Ingredients (B) in another large bowl..(u may also use a ziplock plastic bag for this).
  3. Meanwhile, heat oil in a wok. Make sure it’s hot enough to fry (not smoky).
  4. Place marinated chicken pieces in the mixed flour, coat well and deep fry in oil till cooked. (if using ziplock plastic bag, put mixed flour in the bag..then add chicken pieces, zip it and shake well).
  5. Once cooked, remove chicken from wok, drain excessive oil. Squeeze some lemon juice over the fried chicken (optional).
  6. Yogurt Fried Chicken is ready to be served!

* the use of paprika and cayenne has been adjusted to my preference…u may add/ less the quantity.

Ayam Panggang ala Kenny Rogers

Resipi Ayam Panggang Ala Kenny Rogers

  • 1 ekor ayam (bersihkan dan tidak perlu dipotong kecil)
  • Bahan-2 untuk make up ayam :
  • 3 biji bawang besar
  • 4 biji bawang putih
  • 1 inci halia
  • 2 atau 3 sudu besar sos lada hitam – kite tiru cam kak hana buat, ganti ngan sos tiram+kicap pekat n lada hitam byk.
  • 2 sudu besar madu
  • 1 ketul kiub ayam Knorr
  • 2 sudu besar gula pasir
  • 2 sudu besar herba campuran-ganti dengan oregano dan basil kering
  • 1 1/2 sudu teh garam halus
  • Sedikit air untuk mengisar kesemua bahan make-up.
  • Sedikit mentega
  1. Campur kesemua bahan make-up dengan sedikit air dan kisar.
  2. Lumurkan keseluruhan bahan tadi diluar dan dalam ayam yang telah dibersihkan.
  3. Perap selama 1 1/2 jam.- hana perap semalaman.
  4. Sapu sedikit mentega keseluruhan ayam dan bakar/panggang. Bakar selama 1 1/2 jam atau sehingga ayam masak. Semasa membakar, selepas 1/2 jam pertama, sapukan ayam dengan minyak n campuran rempah yang menitis. Ini supaya ayam tidak terlalu kering.
  5. Hidangkan bersama kentang goreng, coleslaw dan kentang putar.

Morrocan Chicken Drumstick

Ingredients

  • 5 chicken drumsticks
  • 1 onion - chopped
  • 1 cup of water
  • 1 tablespoon of cooking oil
  • 1 teaspoon of crushed garlic
  • 1 teaspoon of salt
  • 1 teaspoon of ginger powder
  • 1/4 teaspoon of turmeric powder
  • 1 egg
  • Bread crumbs
  • Oil for frying

Directions

  1. Add the cooking oil, onion, chicken, garlic, and spices in your cooking pan. Cover the cooking pan and let all the ingredients cook for 5 minutes on medium heat.

  2. After 5 minutes, add 1 cup of water to the chicken. Cover your pan and let the drumsticks cook for 30 minutes. Stir from time to time.

  3. Once the chicken is cooked, remove it from the sauce. Keep the sauce as we are going to present it with the chicken at the end.

  4. Heat the frying oil in a flat pan.

  5. Beat the egg. Dip the chicken drumsticks in the egg, then coat them with bread crumbs.

  6. Fry the chicken drumsticks on every side until golden brown. Use paper towel to remove excess oil when done.

  7. Serving:
    Serve the chicken drumsticks immediatly with the onion sauce in the side. Enjoy!

Chicken Schnitzel


Bread crumbs:

1) Stale bread + parmesan cheese + parsley + thyme + rosemary - blend together. Season with salt and pepper.

Chicken:

Bowl A : Flour + salt + pepper
Bowl B : Egg + Milk (beaten)

1) Letak hirisan ayam dalam bowl A. Tepuk-tepuk. Masukkan ayam bersalut tepung dalam bowl B pula. Then masukkan dalam adunan bread crumbs.

2) Masukkan ayam dalam pan yang sudah di letak olive oil. Sambil masak, sambil masukkan butter. Angkat dan tos.

Salad:

1) Hiris terung, tuang olive oil, tabur dengan garam dan lada, selepas itu grill.
2) Tomato salad: small tomato+olive oil+basil+keju susu segar gaulkan bersama.





Hainanese Chicken Rice


Ingredients For Chicken:

1 chicken (about 1.8 kg)

1 large piece ginger, smashed

3 cloves garlic

1 tbsp salt

1 tbsp sesame oil

1/2 tbsp light soya sauce

Method:

1. Wash chicken and remove excess fat. Stuff chicken with salt, smashed ginger and garlic.

2. Fill a deep pot with water making sure water level is enough to immerse chicken. Bring to a boil and when boiling put in the chicken and cook over low heat for 25 to 30 minutes till chicken is cooked.

3. Remove chicken and drain liquid from the body cavity. Retain chicken stock for making rice and soup. Scoop out oil for making the chilli sauce.

4. Add 2 tbsp salt to a big pot of water. Dip chicken in and let it soak till it has cooled down. Drain and brush chicken with 1 tbsp sesame oil mixed with 1/2 tbsp light soya sauce.

5. Cut chicken into bite-sized pieces and serve, garnished with sliced cucumber, tomatoes and coriander leaves.

Ingredients For Chicken Rice:

600gm fragrant rice

700ml chicken stock

5 cloves garlic, minced

8 shallots, minced

1 small piece ginger, smahed

4 pandan leaves, knotted

4 tbsp corn oil

1 tsp salt

Method:

1. Wash rice, drain in a colander and leave to stand for 10 minutes.

2. Heat 4 tbsp corn oil over high heat in a wok. Add minced shallots and garlic, ginger and pandan leaves, and fry till fragrant.

3. Add rice grains and stir-fry for 3-4 minutes. Transfer to a rice cooker, add chicken stock and salt. When rice is cooked, remove ginger and pandan leaves.

Ingredients for Chilli Sauce:

10 fresh red chillies

6 cloves garlic

5 shallots

2.5 cm piece young ginger

Chicken oil

Juice of 10 limes

2 tbsp vinegar

2 tsp salt

2 tsp sugar

Method:

1. Blend chillies with garlics, shallots and ginger. Add vinegar, lime juice and chicken oil. Add salt and sugar to taste.

Nasi Ayam Simple

Nasi:

1) Tumis bawang besar potong dadu dengan minyak sapi.
2) Masuk beras. Letak air rebusan ayam. Biar masak.

Sup:

1) Rebus ayam dengan bawang putih dan halia. Rebus sampai daging empuk.
2) Keluarkan ayam. Tinggal sikit ayam dalam sup. Masukkan kobis dan letak garam serta lada sulah.
3) Tabur daup sup, daun bawang dan bawang goreng.

Ayam:

1) Ayam yang telah di rebus salut dengan kicap pekat manis, garam dan madu. Biarkan seketika.
2) Curah minyak panas atas ayam yang telah di perap. Bagi nampak golden brown. Atau goreng dalam minyak api kecil.

Sambal:

1) Kisarkan 5 cili besar, 2 tomato, 3 ulas bawang putih. Guna air rebusan untuk kisar. Letak garam, gula dan cuka sesedap rasa.

Hiasan:

Hiaskan dengan timun dan salad.

Chicken Wings with Garlic

Ingredients:

10 chicken wings

10 cloves garlic, smashed

2 tbsp cooking oil

1 cup water

Seasoning:

2 tbsp oyster sauce

1 tbsp light soya sauce

1/2 tbsp dark soya sauce

a pinch of salt

Method:

1. Cut each chicken wing into 2 pieces. Rinse and drain.

2. Heat 2 tbsp oil in wok, saute smashed garlic until fragrant.

3. Add chicken wings, seasoning and one cup water.

4. Let simmer over medium heat for about 20 minutes or until wings are tender.
